Justo M. del Amo
Born in Salamanca, Spain, Justo began his professional in 1979 by working in a number of "Paradores" (historic buildings such as castles, palaces and monasteries, which have been restored and converted into top class hotels). At the age of 26,
Justo, travelled to Australia to take a position at Ayers House, which in 1985 was Adelaide's best fine
dining restaurant. Since then, Justo, has enjoyed a successful career earning himself a "Silver Spoon" and a "Golden Fork" Awards in 1987 and 1988 respectively, for his work at "Balanzone Restaurant". In 1998,
Justo, presented two sessions on Spanish Olive Oil at "Hilton Masterclasses" in Brisbane. He was also a presenter at "Wine
Australia" in Melbourne.
In 1999 he was invited by the "International Olive Oil Council" to present two sessions at "Australia Food Congress" in Sydney. He is the Chef Consultant for the "Spanish Commercial Office" in Australia and teaches regularly un a number of cooking schools.
He is currently teaching cuisine in
Badajoz in Spain. He has been the chef consultant for ‘Tertulia’,
the Spanish olive oil magazine.
