| About the author: Mark Dymiotis is a researcher, writer and tutor specialising in the Greek/Mediterranean everyday diet. He recently spent four months in Greece (one month in Crete) and Cyprus learning about olives and olive oil and he is now writing a book on olives and olive oil.
His work has been published in major Australian
publications eg The Age and he has been guest speaker and presenter of the Greek/Mediterranean everyday diet.
He teaches with the Council of Adult Education (Melbourne) and Monash University Short Courses: Olives and olive oil, stuffed vegetables, Greek/Mediterranean everyday diet, old style bread (sour dough), pizza making, building and firing of
traditional wood fired ovens. He may be
