Outstanding Selection of Extra Virgin Olive Oils at Savantes,
Sevilla and Modena
‘The
best selection of olive oils in seven years of Savantes’ was the
conclusion of the presenters of Savantes in Sevilla in Spain and
Modena in Italy 2008. Many of the extra virgin olive oils were
winners of prestigious awards around the world.
Attended by those with an interest in olive oil from Morocco, United
Kingdom, South Africa, New Zealand, Australia, Portugal and Spain,
the three day programmes guided participants through commercial
tasting, culinary uses, blending and marketing extra virgin olive
oils. The participants’ interests included production, high end
retail buying, trading and export, brand marketing and culinary
uses.
The extra virgin olive oils tasted represented the very wide range
of styles from the world’s best known and new production regions and
participants were tutored in the description of taste
characteristics by international olive oil expert Judy Ridgway.
Gerardo Jimenez instructed the groups on the difficult task of
detecting faulty olive oils and Simon Field led exercises in
blending for consistency and economics.
One of the many highlights was the culinary session conducted in
Sevilla by Enrique Sanchez, the head of culinary arts at the
international Spanish cooking school, Escuela de Hosteleria de
Sevilla, The presentation covered the traditional uses of olive oil
in cooking as well as modern leading edge techniques such as
producing frozen olive oil cubes and olive oil ‘popcorn’.
In Modena, the simplicity of using olive oil in traditional food of
the Emilia Romagna region was passionately demonstrated by the
respected chef, Anna Maria Barbieri.
Following the success of these first Savantes courses in Europe the
organisers have committed to repeating the course in Sevilla in May
2009, with a second course either in Modena or London in early June
2009.
